When I was starting out, I was very interested in smoking, but didn't have a traditional smoker. I would either experiment by using my hand-me-down gas grill with one burner removed, or the side of a regular charcoal grill. It was nice because it was a low commitment way to learn but I would not recommend it to people starting out because it was too difficult. I didn't have a good way to regulate, or measure the heat. My worst experience was trying to smoke a brisket using a charcoal grill setup. I got the fire started, added the wood and then proceeded to char the brisket very quickly. The good part is I didn't know any better. Now that I ham more experienced I realize how poorly that one turned out and how many things I did wrong.
