I loved my Blackstone griddle, but there is just something about starting a smoke at 2 in the morning that makes men happy. I mean….hell yeah.
What is your grill of choice?

I Did It All For the Wookie
Yeah I cheat and used a pellet smoker. I got a vertical one because family would come over and I would smoke a lot at once sometimes. I’d still buy a smoker/grill next time. I cheated with the electric pellet smoker lol. Set and forget. I would just have to make sure there was water on the pan at the bottom so it would get too dry in the smoker.
 
I don’t think that is cheating :) I have heard those are very consistent and produce a great smoke. I hope to try it someday.

I Did It All For the Wookie
Oh yeah I loved it. Only thing you gotta be around for is the stall. I normally wrap the meat around 145 when it begins to stall out and no cook anymore so it’s not a 24 hour smoke lol. I would take it out a few degrees before desired temp and wrap in a towel and put in a cooler. I smoked pork butt the most cuz it’s only 15 bucks or so and I could make a bunch of pulled pork from it.
 
Ok, I can tell you are way more advanced than I am. It is the T3xas shining through, right?

Navigating the stall is so important. I’m still learning the best technique. I typically take a brisket out and wrap it in foil and throw it in the oven inside. Now THAT’S cheating.

The hardest part of smoking in MN are the temperatures shifts. I sometimes feel it is easiest to smoke in the winter when you have less variability. It seems like this smoker would help with temperature variability.
 
It might be an unpopular opinion, but I prefer cooking, pulling, and eating a pork butt over doing a brisket.
 
I’ve never grill/smoked one before. We have done it in a slow cooker. How long does it typically take?
 
I plan for 1.5 hrs a pound. But like all things smoked, it’s done when it’s done. I put two equally sized butts on (thanks Costco two pack!) once and had one finish in 12 hours and the other in 16. For butts I don’t wrap, though I probably should have for that 16 hour one
