Would love to see Maple Treeway from the Wii. Great course that would be amazing with upgraded graphics. Also the music to this course is so relaxing and nice.

Luigi Circuit (bc it's shaped like my favorite F1 track: Monza) - Wii
Daisy Circuit (bc it's shaped like Monaco) - Wii

Admittedly I haven't played any Kart games between N64 to MK8. There's tracks I've seen that look fun though, so I'll be excited for whatever new they bring!

I was going to say DK Mountain...
However, I’m going to go with an outside-the-box (likely impossible) choice - how awesome would it be if they could include a level from Diddy Kong Racing (like Crescent Island or Darkmoon Caverns)?! Maybe it could help launch a much-needed sequel!
