I was reminded that my plans to smoke ribs of the 4th were delayed. Getting it in now. Made a batch of my special rub.

The Twins are wearing the cream uniforms today so I am too.

This morning I went for smoked eggs with the leftover ribs I smoked yesterday. I used mesquite chips in my indoor smoker. Delicious.

I've tried Apple and cherry wood chips but I don't sense the flavor. So this has been my go to for a good smoked meat.

Apple and Hickory chunks are my go to, but if I can get Pecan, I like using that with Pork products. Need to find something better than the bags at Home Depot that don't cost three times as much. The consistency in the bags is terrible.

I'm cheap but not that cheap - Traeger mix big bag from Costco but haven't sunk down to the Kirkland pellets...yet.
